I started making these paninis when I got married 10 years ago. They were my favorite thing to make for lunch, dinner or mini versions cut up were the cutest when entertaining. A perfect sandwich has many parts: the right bread, the ratio of the bread to filling, the sauce or spread and “extras” – in this case a delicious balsamic glaze that gets drizzled on the hearty veggie topping. I hope you make these, and feel free to choose your favorite veggies.
I know some people can have strong feelings about eggplant but I promise you in this recipe – you won’t notice and you need a vegetable that is hearty and has good texture. Mushrooms would be a great addition or swap as well.
Where to Find Ciabatta Bread:
I love Ciabatta bread for the crispy golden exterior and chew interior. You can get an entire loaf like this one and then cut it into pieces. Also, Costco & Trader Joe’s have some great options, but if you don’t have one of these near you check out a local bakery, Panera Bread or the bakery department of your grocery store – sometimes they’re sold in a single roll.
Basil Walnut Pesto:
I use walnuts but you could also use different nuts like pine nuts or pistachios. You can increase the spice by adding a jalapeño as well and it would be delicious. Alternatively, feel free to use a store bought pesto. There are some great options at Costco, Wegmans etc. Even the Zhoug Sauce from Trader Joes is a nice touch here!
Balsamic Glaze is different than Balsamic Vinegar. It’s thick and syrupy and is perfectly tart, sweet and acidic!

Absolutely delicious and most flavorful sandwich I’ve ever had. My husband isn’t a big veggie person but he devoured this!! I tried it with black garlic since I didn’t have fresh garlic on hand and it tasted amazing. 5 star for sure!
