For 8 years, I worked at my parents’ deli where I made my share of hoagies and grinders, and where I also discovered my love for deli salads! This Indian-inspired Curried Chickpea Salad, with Indian flavors like curry powder, garam masala, turmeric, cilantro and green chilis, is an upgraded, vegetarian version of my popular Curried Egg Salad Sandwiches!
Similar to many Mediterranean recipes with hummus, this no-cook, vegetarian meal is simple, healthy, and so easy to make – it’s perfect for your meal prep menu or for a quick lunch on crazy days!

Few Important Tips
