This is not an authentic “breaded & fried” Italian Eggplant Parmigiano by any means, but with basic ingredients like eggplant, cheeses, Panko, store-bought marinara sauce, and pantry herbs & spices, this family favorite meal comes together in 4 fast steps (toast the Panko, bake the eggplant, chop the herbs, then layer the ingredients like a lasagna and cook) so you can quickly make this healthy dinner, even on a busy weeknight! Few Important Tips!
- It’s important to cut the eggplant sliced into even thickness for uniform cooking. I use this Mandoline Food Slicer
- You can make the ricotta mixture up to 2 days in advance and pre-make the eggplant seasoning to store in a baggie.
- Instead of brushing the eggplant with oil, you can use an avocado or olive oil spray!
- Rao’s Arrabbiata sauce is PERFECT for this recipe – no preservatives and great flavor.
- I know shredded cheese melts better, but Sargento’s 6-cheese pre-shredded Italian blend is SO DREAMY and saves time!
- To make this even easier, jazz up the ricotta with a store-bought pesto and call it a day!

What Are the Ingredients in Eggplant Parmesan?
The basic ingredients in Eggplant Parm are totally vegetarian and super healthy! I use ingredients like fresh eggplant, a jar of your favorite marinara (I’m devoted to Rao’s Arrabbiata Sauce), Italian cheeses like mozzarella, parmesan, asiago, fontina, and ricotta, fresh basil, scallions, and Panko breadcrumbs seasoned with onion, garlic and oregano. Our “spicy” Indian version also includes red chili pepper, jalapenos, and serranos for a full-of-flavor, crazy delicious spin on a traditional Italian dish.
Is Eggplant Parmesan Hard to Make?

While some parmesiano recipes can be complicated and time-consuming, this one has 4 simple steps, uses some store-bought ingredients, and takes only 10 minutes to prep! This recipe is so delicious. I was nervous about making it because my eggplant never turns out well. This recipe however, will not disappoint. I’m giving it 5 stars for the flavor, however never time I make this, I would use 2 to 3 pounds of eggplant. The recipe called for 1 pound, which was only 1 eggplant (it really wasn’t enough). Also, depending on the amount of eggplant you use, you may have leftover tomato sauce and ricotta.

First off delicious!! However I found that some of the ingredients to be coming up short. I definitely needed 3x the garlic oil mixture. I was only able to LIGHTLY coat HALF the eggplants on ONE side.

Hi Sabeen! I so feel you on eggplant parmigiana lacking flavor! I order it all the time at restaurants and I am always disappointed ! To answer your question, I didn’t serve this with anything because it is very filling and hearty, it doesn’t need a side! However if you want to make it a more complete meal, you could always start with a salad as a small first course or serve the eggplant with some garlic bread- I def would not suggest pasta- it would be too heavy in my opinion.
