Few Important Tips!
- Feel free to customize this for your family! For example you could add tofu, chickpeas, chicken or shrimp to your curry.
- You can also top the soup with sour cream, green onions or roasted pumpkin seeds for added flavor, color and texture!

How Spicy is Curry?
The spiciness of curry all depends on the recipe – each one is unique! The only “heat” in this Coconut Curry & Sweet Potato Soup is the curry powder, which you could use more or less of, depending on your tolerance for spice! In addition, the sweetness of the coconut milk and sweet potatoes temper the heat, making it feel like a warm, cozy comfort food.
What’s the Difference Between Indian Curry and Thai Curry?
Indian curry uses earthy, rich spices called “masala” with tomatoes, cream or yogurt to create a deep, savory curry sauce for breads, vegetables, rice, and meat. Thai curry dilutes their spices (like lemongrass, chilies, garlic and galangal) with coconut milk which gives a sweeter flavor and is most often served over rice or seafood.
