Easy, flavorful Skillet Breakfast Potatoes are the perfect side dish! This crispy Indian-fusion recipe turns any brunch or morning meal into something special!
I LOVE a good breakfast potato – but they’ve gotta be flavorful, cut just right into small cubes, and have a nice crispy outside with a fluffy inside! I also don’t want to chop a million things early in the morning, so this 5-ingredient recipe with onions, peppers and taco seasoning is great! The taco seasoning makes these potatoes quick – I don’t have to reach for a million different spice jars to make them tasty! Serve these potatoes with fried or scrambled eggs for a simple, well-rounded breakfast.

Few Important Tips:
- A nonstick skillet works best, but a well-seasoned cast iron skillet works well, too!
- Don’t skip putting the lid on the potatoes while cooking – this keeps the moisture in so the steam can soften the potatoes.
- I love Trader Joe’s taco seasoning but if you don’t have access to a Trader Joe’s, find a taco seasoning with clean ingredients (some of them can be super powdery versus a good blend of spices) and note if it has salt. If your taco seasoning does not have salt, you will need to add additional salt to this recipe.
- I’ve used red potatoes for this recipe and love the texture, creaminess and overall taste of them! Super easy to find at any grocery store! Russet or Yukon Gold potatoes make great hash browns, too!
- You can use frozen diced potatoes (or hash browns) to speed up this recipe, just be aware that some brands have ingredients like dextrose and sodium acid pyrophosphate.
- If you want to make a bigger batch, I suggest tossing all the ingredients together in a big bowl, then roasting them on a cooking sheet in the oven for 15 minutes at 425 until they’re fork tender.

How Long Does it Take to Make Skillet Hash Brown Potatoes?
This recipe for Skillet Potatoes is quick! It only takes 10 minutes or so to chop the onions and peppers and another 15 minutes to fry them up in the skillet with a little oil and some seasonings. It’s fast and fabulous!
