There’s something undeniably comforting about a warm bowl of creamy soup, especially when it’s brimming with hearty ingredients, bursting with flavors, and ready in 25 minutes! This Italian-inspired Tortellini Soup is an easy weeknight dinner that features store-bought pasta, heavy cream, parmesan cheese, tomato paste, aromatic veggies & seasonings.

I recently made it for my 6 year old for the first time and he loved the way the cheesy tortellini went “pop pop pop” in his mouth! He even asked me if I could make it more often- total mom win!

Few Important Tips!
- Want to get some extra fiber in this dish? Add in some spinach, kale, or frozen mixed vegetables for added nutrition.
- What’s the best tortellini to use? I love the 4 cheese Bertagni brand tortellini from Whole Foods – it comes in the refrigerated section but Trader Joe’s also has many options.
- What can you serve this with? All that extra broth in this soup deservers a piece of crusty, buttery garlic bread for dipping!
- Want to add more protein? Ground sausage or pork would be delicious but even a quick addition of some sliced chicken sausages would do the trick.
- To make the prep easier- simply peel and chop the vegetables a day before! I also always peel and blend garlic every few weeks and then freeze the minced garlic in ice cube trays with lids! Then you just have to pop out a little cube of garlic as needed in recipes.
Is Tortellini Soup Vegetarian Friendly?
It sure is! It’s naturally vegetarian and loaded with healthy ingredients! You can make it even heartier by adding in your favorite beans (white beans or kidney beans would be a great addition). But it’s also a very versatile recipe – you can easily add in andouille sausage or shredded chicken (rotisserie is super easy!)
How Long Will the Leftovers Last?
Sealed in an air-tight container in the fridge, this soup is even better on the second and third day! The tortellini will absorb alot of the broth, so add in some milk or cream when reheating to get it back to the right consistency.
